What's For Lunch?

As usual it's a thursday and that usually means bare cabinets, but I'm actually not headed to the store for another week. Last week I made a trip to the store and covered two weeks worth of groceries. I am running low on options for lunch, however.

So today I decided to make a turkey and roasted red pepper sandwich. Usually my sandwiches consist of meat and cheese. Since cheese isn't an option for a while, (due to hubby's diet) I decided to make a sauce for my sandwich. I love spicy food, so I decided a spicy sauce would be really yummy for my sandwich.

After doing some surfing for a yummy recipe, I found this one:

Chipotle Sauce:

1/3 cup sour cream, preferably reduced-fat
3 Tbsp. mayonnaise, preferably reduced-fat
2 Tbsp. freshly squeezed lime juice
1 Tbsp. canned chipotle chiles (about 1 chile)
2 cloves garlic
1/2 tsp. chili powder

Directions:
Combine all the chipotle sauce ingredients in a blender or small food processor and process until smooth. The sauce will thicken slightly as it stands and will keep for 2 to 3 weeks in the refrigerator.

Since sour cream is something I rarely have anymore on hand, I just omitted it. Also I used chipotle powder instead of the canned version. Even without the sour cream and with the difference in chiptole flavoring, the sauce turned out very yummy! If anyone tries this recipe as it is, I would love to know what you think.

Cheap and Easy Japanese Lunch

By Thursday our cabinets are generally back down to the basics since we always do our shopping on a Friday. Today I was craving something different than the ordinary peanut butter and jelly sandwich. So after finding some brown rice in the cabinet and surfing online for a good rice sauce. I found this one:

Japanese Ginger Sauce
  • 1TBSP
  • 2TBSP water
  • 4tsp soy sauce
  • 1garlic clove minced
  • 3slices fresh ginger-about dime size
  • 1tsp sugar
  • 2TBSP oil
Add oil in a stream into blender.

The above sauce is actually used for steaks, but it sounded yummy enough for rice, so I gave it a try. I did adjust the recipe just a bit. I omitted the water and used ground ginger instead of fresh. Also I added some crushed red peppers since I love spicy foods! The result: Absolutely Delicious!

Rotten Barbeque Sauce = Bad McDonalds

Since when is it okay to serve rotten barbecue sauce to your customers? Apparently McDonalds certainly doesn't mind.

Tonight we decided to treat the kids to McDonald's. We're used to them getting our orders mixed up, but it never occurred to us to check the barbecue sauce. After the kids had dug halfway through the sauce for their nuggets, my husband realized there was a rotten smell coming from the stuff. So, he checked the other sauces only to discover they were just as rotten. Yuck!

So what about expiration dates? You would think that there would be some sort of expiration date on the sauce, but there wasn't. Don't know what's going to become of the whole situation. We're just thankful the kids didn't eat much of the nasty stuff!
